My favorite cookies!

Today I made a batch of my favorite cookies. I'm going to bring some to the neighbor's BBQ tonight and then bring the rest to Great Grandma's on Saturday when we watch the fireworks.
Since it's one of the best cookie recipes ever, I figured I'd share it with you! I know some of you have it already, but for those of you who don't, you're going to want to try it! And there are only 4 ingredients!

Mix together 4 eggs, 2 Devil's Food cake mixes, and 1 cup of oil. Try not to be scared off by so much oil. A normal Devil's food cake mix calls for 1/2 cup of oil, and since the recipe calls for 2 cake mixes, there's no more oil than a regular cake would have.

Once you have it all mixed together, drop the cookie dough onto the cookie sheet. Cook at 350 degrees for 10 minutes. While they are cooking, unwrap enough Andes mints so that you have one for each cookie. (I use the Pampered Chef medium scoop and it makes about 3 1/2 dozen cookies. That's just short of two boxes of Andes.)


As soon as the cookies come out of the oven place a mint on top of each cookie. I use the mint to press the cookie down just a little bit . You maybe wouldn't need to, I just realize I do it every time.


Once the mints are soft, spread them around with the back of a spoon. The mint will set up again once the cookies are totally cool. But if you're going to stack them in a container, I'd recommend putting some parchment paper between your layers.


They are like a homemade version of the Girl Scout's Thin Mint cookies! Yum Yum Yum!!! They are my favorite. I got the recipe a couple years ago from my friend Theresa.






And to make a sweet cookie even sweeter... put it in the hands of a cute little 14 month old!
